A fabulous skin glowing treat. The addition of walnuts provide essential omega 3 fatty acids known to lower inflammation and nourish the skin. Using cranberries provides natural sweetness as well as skin protective antioxidants while carrots are rich in carotenoids known to help protect the skin from damage. Using fruits and carrots boosts your intake of vitamin C which is essential for collagen production giving your skin a natural glow.

Makes 20 balls
60g dried cranberries
1 tsp vanilla extract
1 tbsp maple syrup
3 tbsp apple puree
1 tablespoon softened coconut oil
60g desiccated coconut
30g walnuts finely chopped
2 tablespoons coconut flour
1 scoop vanilla protein powder
1 tsp ground cinnamon
30g puffed rice
75g carrot, finely grated
To roll: desiccated coconut, optional
Place the cranberries, vanilla, maple syrup, apple puree and coconut oil in a food processor and blend until it forms a paste. Add the coconut, walnuts, coconut flour, protein powder and cinnamon and process again briefly to break up the nuts. Add the puffed rice and carrots and pulse briefly until combined but keep some texture.
Take walnut size pieces of the mixture and roll into balls. If wished roll them in the desiccated coconut to coat.
Store in the fridge for up to 3-4 days.
